Salad Supreme

1 medium-sized chicken

a small onion

1/2 salt

1 cup diced celery

1 cup potatoes, cubed and boiled

Pepper and salt to taste

1 cup milk cream

1 tbsp butter

3 tbsp vinegar

2 egg yolks

2 tsp prepared mustard

a few lettuce leaves

a few slices of fresh tomato

Preparation

Boil the chickenĀ  with the whole onion and salt in 2 cups of water. Cook till the chicken is tender and the water dries up. Dice the chicken and mix with celery, potatoes and seasoning.

Prepare the dressing. Heat cream, add butter, vinegar, egg yolks and mustard. Cook over a slow flame till it becomes a thick sauce. Remove from fire but keep stirring till it is cold. Add chicken and mix well.

Arrange the chicken mixture in the center and the shredded lettuce leaves all over, or piped around it. Garnish with tomato slices around.

Chicken Spaghetti

2 cups chicken, cooked and diced

250 g spaghetti

5 tbsp butter

3 tbsp flour

2 1/2 cups chicken stock

2 onions, chopped fine

1 cup peas, shelled and boiled

1 cup carrots diced and boiled

1 large capsicum, seed and chopped

1 tbsp chopped coriander

1/2 tsp crushed, dried mint

1 cup tomato puree

salt

1 tbsp grated cheese for garnish (optional)

Preparation

Boil and drain spaghetti. Heat 3 tbsp butter, fry flour, remove from fire and slowly add the stock. Add seasoning and cook till the sauce is thick.

Heat 2 tbsp butter and saute onions, peas, carrots and capsicum, add coriander and mint and cook for one minute. Add diced chicken, tomato puree and more seasoning if required. Cook for another 3 minutes and add the sauce kept aside earlier and lemon juice. Pour over spaghetti and mix. Garnish with grated cheese if desired.

Chicken Salad 2

1 cup chicken, cooked and shredded

1/2 cup chopped walnuts

1/2 cup shredded pineapple (tinned)

1/2 cup chopped apple

a few chopped glace cherries

For the sauce

1 hard-boiled egg yolk

1 cup heavy cream

1 cup mayonnaise

juice of 1 orange

1 tbs tomato ketchup

2 tsp Worcestershire sauce

a little chili sauce (optional)

Preparation

Mix all the ingredients for the sauce in a bowl kept on ice. (first mash the egg yolk, then add mayonnaise, mixing all the time, and then add the other ingredients one at a time, add the cream last.) Mix in the chicken, walnuts, pineapple,apple and cherries.

This recipe can also be used for prawns.

Chicken Salad

300 g chicken, cooked and diced

2 large potatoes, boiled peeled and diced

1 small cucumber peeled and diced

2 spring onions, thinly sliced

1 stick celery, chopped

a few lettuce leaves

6 eggs hard boiled and shelled

3 tblsp mayonnaise

For the french dressing

6 tblsp salad oil

3 tblsp vinegar

1/2 tsp salt

1/4 tsp pepper

1 tsp French mustard

2 tsp castor sugar

2 tblsp onion, finely chopped

Mix all the ingredients for the French dressing (from the salad oil to finely chopped onion). Combine the chicken, potatoes, cucumber, onion and celery together in a bowl. Add the French dressing. Check for seasoning. Arrange fresh lettuce leaves on the plate and pile the mixed salad in the center. Cut eggs in halves length wise. Arrange in a circle around the border, with their cut sides down.

You could add a touch of cocheneal colouring to the mayonnaise before pipping it over the eggs in any design. Chill till required.
